Vin Jaune (yellow wine) is a speciality of the Jura region in eastern France. It is made in a similar way to Fino Sherry, in that the wine is allowed to develop a yeast coating (flor) in barrel, and is left to mature for six years and three months without topping up, giving a thicker wine more suited to meat and cheese dishes, particularly the local Comté.
