A speciality of Alsace (but now labelled elsewhere in France as such) vendanges tardives (literally 'late harvest') refers to the practice of picking grapes later, allowing them to start to dehydrate and shrivel on the vine, to aid concentration of flavour and sugars in the grapes. When pluralised (as here) the term refers to the fact that several runs through the vineyard and manual selection are often needed to produce such wines.
