One of the sweetest examples of Riesling, Eiswein wine is made from individually selected berries harvested during a hard winter frost late in the year (often the following year). Natural freezing serves to concentrate the juice by leaving behind ice in the presses. As sweet as a Beerenauslese, this wine however avoids botrytis affected grapes and the noble rot character this lends, and so is crisper due to higher residual acidity.
