Château Chalon is the finest appellation for Vin Jaune (yellow wine), a speciality of the Jura region in eastern France. It is made in a similar way to Fino Sherry, in that the wine is allowed to develop a yeast coating (flor) in barrel, and is left to mature for six years and three months without topping up. This gives a thicker wine more suited to white meat and cheese dishes, particularly the local Comté.
